Plantains Rougail

When you can’t travel and visit the marvelous countries that the world has to offer, food might be an alternative, at least for your taste buds. Today, we’re taking a culinary trip to Reunion Island, which hides a variety of recipes with rougail (a traditional hot salsa). Though it is usually cooked with fish or meat, we decided to propose you one with plantain.


Serves 2
2 plantains (around 300g)
Salt to taste
1 tsp Bouquet garni
1 tsp red hot pepper paste
1 onion
2 chives
1/2 clove of garlic
100g crushed tomatoes
150ml water
1tsp cane sugar
1 tbsp olive oil

1. Cut the plantains into cubes
2. Chop the onion
3. In a pan, heat the oil and cook the onion for 2 minutes or until soft.
4. Add the Bouquet garni, crushed tomatoes, cane sugar, salt, water, garlic and the tomato paste.
5. Add the plantains.
6. Bring to a boil and reduce heat. Simmer for 10 minutes. Mix well with a wooden spatula from time to time so the preparation doesn’t stick to the pan.
