Strawberry Spinach Shrimp Salad

Summertime drives us toward fresh meals, salads, fruits, and seafood. While it all sounds delicious, combining all these ingredients together is not an easy task, especially for those who are not big fans of sweet and salty meals.
This quick and easy salad will not only refresh those hot summertime evenings, but will also convert anti sweet-and-salty-meals fellas.

INGREDIENTS
Serves 2
2 handful of baby spinach
10 strawberries
1 tomato
60g feta cheese cubes
Honey
Shrimps (we used baby shrimps)
1 shallot
1 tbsp olive oil
2 tbsp honey
For the seasoning
Salt to taste
Pepper to taste
1tbsp honey
1 tbsp olive oil

STEPS
1. Chop the shallot
2. In a pan, heat the oil and cook the shallot for 2 minutes or until soft.
3. Add the shrimps and cook for 2 minutes. Add 2 tbsp of honey, mix well and cook until golden. This step will help ‘cover’ the extra salt that seafood tends to have. Set aside to cool once ready.
4. In a bowl, mix the spinach, strawberries cut in three, tomato cut in cubes, feta cheese cubes and the cooled down shrimps.
5. In a separate bowl mix the salt, pepper, honey, oil and the balsamic vinegar.
6. Add the seasoning to your salad. Mix well and serve!
